It's official: Time Out Montréal Market officially welcomes Climats, a modern new brasserie highlighting local flavours, designed and created from A to Z for the Market —the best of the city under one roof.
The mastermind behind Climats is Chef Jean-Sébastien Giguère, the renowned chef at the helm of Le Coureur des Bois bistro, Cabane du Coureur, and Restaurant H3 (located on the edge of downtown Montreal).
With a professional journey that has taken him through several of the most famous restaurants in Canada, including Toqué! and La Cabane au Pied de Cochon, the chef is serving up a modern menu at the Market that is at once indulgent, comforting, and accessible. Punctuated by locally sourced ingredients, expect them to appear in traditional form—and sometimes with a completely unique twist.
"I wanted to include classics like a giant guédille or fish and chips, but in a next-level, unique way," explains Chef Giguère.
The guédille (if it's your first time, think lobster roll) will be served in an oversized hot dog bun custom-made by the artisanal bakery le Tamelier. And the fish will be made with nothing less than Gaspé halibut.
Other dishes with more distinctive flavours will also make their appearance on the menu, like the seared salmon with a cream of corn and seasonal vegetables, mussels marinière and fries, a maple grilled chicken burrito, and beef carpaccio with truffle mayo, egg yolk jam, and parmesan.
