The Market is bringing some serious Spanish flavour to downtown Montreal.
It’s opening day for Ibéricos, Montreal’s favourite tapas tavern, at Time Out Market Montreal—home to the best chefs and restaurants in the city under one roof.
Simmering seafood paella brimming with golden rice? Perfectly crisp cod fritters doused in maple syrup with a dash of lemon zest? And a Basque cheesecake so decadent it will live rent free in your mind for weeks? Chef Haissam Souki Tamayo will be serving it all and more at the Market.
Originally from Venezuela, Chef Haissam has created a menu that marries both traditional and contemporary Spanish cuisine. After working in Michelin-starred kitchens and alongside legendary chefs, Chef Haissam’s Montreal restaurant, Ibéricos, draws inspiration from Spain’s culture and flavours to create dishes that remain true to Spanish culinary traditions while using local ingredients.
“I make sure I have the best tomatoes I can get in town from Birri,” Chef Haissam explains. “My bread comes from Jeffrey at Hof Kelsten. He started making that kind of bread because I begged him!”
Starting on June 20, Ibéricos’s new outpost at Time Out Market Montréal will be dishing all the Spanish favourites.
From an impossibly soft Spanish Tortilla that will melt in your mouth to the ham croquettes—golden brown bites that are guaranteed to disappear in an instant—Ibéricos’s menu brings an experience.
“We want people who come to the restaurant to feel like they are in Spain—the whole experience, not just the food,” Chef Haissam explains.
