Two acclaimed chefs are creating one fine dining experience at Time Out Market Montréal and you’re not going to want to miss it.

Home to some of the city’s best chefs and restaurants under one roof, the Market is hosting Chef Rodolfo Cuadros (Time Out Market Chicago) who has created an exclusive joint menu with Chef Paul Toussaint (Time Out Market Montréal).

For this edition of Chefs On Tour—Time Out Market's distinctive chef’s table dinner series showcasing the exceptional talent and creativity of chefs from different Time Out Markets around the world—Chef Rodolfo Cuadros from Time Out Market Chicago’s Lil’ Amaru shines a spotlight on Hispanic American heritage, taking diners on a culinary exploration that captures the diverse flavours and ingredients emblematic of Latin, Caribbean, and American cultures.

Chef Rodolfo Cuadros, hailing from Colombia, is the executive chef and owner of acclaimed restaurants Amaru, Bloom Plant Based Kitchen, and Don Bucio’s Taqueria in Chicago. With a Culinary Arts degree from Johnson and Wales University and experience working with renowned chefs globally, Cuadros brings together Latin American flavours and ingredients in his cuisine.

Amaru, showcasing Pan-Latin cuisine, led to the opening of Lil’ Amaru and Bloom, a plant-based concept born during the pandemic. Inspired by his wife's vegetarian family, Cuadros expanded his offerings, emphasizing flavourful, healthy, and affordable plant-based food. Don Bucio’s Taqueria, opened in 2023, offers a unique plant-based Mexican dining experience. Cuadros' passion for Latin food, influenced by his travels, guides his restaurants, bringing people together through diverse and delicious dishes. Amaru, Lil’ Amaru, Bloom, and Don Bucio’s Taqueria represent Cuadros' culinary journey and dedication to sharing vibrant flavours.

 Joining Chef Cuadros at Time Out Market Montréal is Chef Paul Toussaint, whose dedication to Caribbean cuisine has been captivating the hearts and palates of Montréal since his return from Haiti in 2017. At the Market, Chef Toussaint serves up a menu that celebrates the rich and comforting flavours of his homeland. Visitors to Time Out Market Montréal are guaranteed a soulful dining experience, with dishes so captivating they are eager for seconds before they've even finished their first bites.

Born in Jacmel, Haiti, Paul Toussaint, a former law student, shifted to the culinary world and honed his skills at Toqué!, one of the world's top restaurants. After contributing to Haiti's post-earthquake reconstruction, he became the executive chef at Agrikol in Montreal, showcasing Haitian cuisine. His passion for Caribbean influences led to the creation of Kamúy and Americas BBQ.

Awarded Chef of the Year in 2021 and featured in Canada's 100 Best in 2020, Chef Paul embraces art and music at Kamúy. His culinary expertise extends to events like Osheaga and îLESONIQ festivals. An art collector, Chef Paul supports charitable organizations like Welcome Hall Mission and Artists for Peace and Justice. Chef Paul Toussaint at Time Out Market Montréal offers savoury Haitian cuisine, featuring dishes like griot with pikliz, pineapple-and-rum ribs, accra fritters, and fried plantains. His passionate approach to Caribbean fare commands attention, making his restaurants a soulful destination.

Join us at Time Out Market Montréal on Wednesday, March 27 at the new Wine Bar to experience a 10-course fine dining menu and specially-curated drink pairings with renowned chefs Chef Paul Toussaint from Time Out Market Montréal and Chef Rodolfo Cuadros from Time Out Market Chicago.

What is Chefs on Tour?

As part of the Chefs on Tour initiative, Time Out Market brings together chefs from different Markets across the globe—it’s a new collaborative chef’s table dinner, offering an exclusive one-off dining experience. One Time Out Market chef travels while another Time Out Market chef welcomes them, creating one collaborative menu.

For the first Chefs On Tour in March 2023, Chef Stephen Gillanders from Time Out Market Chicago traveled to Lisbon and then Dubai to create a unique fine dining experience for one night in each city with Chef Susana Felicidade (Time Out Market Lisbon) and Chef Reif Othman (Time Out Market Dubai).

The second installment had Chef Reif Othman traveling to the US where he collaborated with Chef Michael Ayoub in Time Out Market New York followed by a visit to Time Out Market Chicago to cook with Chef Rodolfo Cuadros. 

Chefs on Tour offers a fine dining experience—complete with specially-curated drinks pairings—set within the casual and energetic environment which Time Out Market is known for. Guests will be seated around a large communal table, right in front of the open kitchen where the two chefs will cook and present their menu, where they will experience the buzzing energy and creativity anchored to this intimate, ridiculously delicious dinner.
