It’s a dome with a view: Eat in a magical bubble on one of Old Montreal’s most spectacular rooftops this winter.

Hotel William Gray, home to one of the city’s best spas and summer rooftop terrasses, is bringing a brand new outdoor dining experience to Montreal.

Enjoy a sugar shack-inspired meal featuring locally sourced ingredients inside clear, heated, frameless geodesic domes.

Get ready: The terrasse is transformed into an elegant, magical experience (picture sparkly lights, candles and faux-fur throws) with staggering views of Old Montreal's skyline (cue La Grande Roue, Marché Bonsecours and the river beyond) that are only enjoyed during the warmer months.

Each heated dome can accommodate groups of four to eight people. And the maple-soaked menu, masterfully created by Terrasse William Gray’s chef using local ingredients, features a limited-edition special cocktail (if you like a spicy Caesar with a Vegas-sized garnish, this drink is for you).

The Sugar Shack-themed menu kicks off with a Quebec charcuterie and cheese platter, followed by platter of small nibbles (think: foie gras cheese puffs, maple caramelized truffles, Sauvagine cheese croquettes, maple candied onions, and maple smoked salmon roll topped with yuzu cream).

Next up is a choice between marinated beef carpaccio, maple smoked goat cheese with a Sortilège whisky vinaigrette or local pulled pork pies (pithiviers) and fig confit.

The main event was a selection of lamb (slow cooked with pan drippings, sweet purple potato purée and sweet potato chips), Arctic char (served on braised fennel and burnt lemon hollandaise) or orecchiette (bathed in truffle, parmesan, oyster mushrooms, candied tomato oil and topped with a poached egg).

Save room for the pudding chômeur (a pudding cake with, you guessed it, maple syrup) or the apple and Sortilège whisky cheesecake.
