After years of fine dining and tasting menus, Marché La Pantry Par Dany Bolduc represents an opportunity for the chef to democratize his work by making it available to the public: "Several sauces that I use in restaurants, the yogurt we make from cow's milk and soy yogurt, grilled octopus and many other (proteins) that are marinated or served in sous-vide bags will be available at all times," the chef told Time Out Montreal a day before the grand opening. All of these ingredients, as well as the restaurant's popular sourdough bread, potato buns and donuts that have been featured on past menus.
In addition to all of those ingredients, the new market features ready-made meals including fried chicken and fish 'n' chips, as well as dishes that will change with the seasons and a counter well stocked with sandwiches, salads and several desserts coming from the restaurant's pastry chef Eric Champagne (Perles et Paddock, Hvor, Libertine Bakehouse).
"We are very happy to revive this small historic spot in the district that meets a lot of demands in the area," a co-owner and maître d'hôtel of H4C Alexandra Dubreuil-Gagnon says, noting that Saint-Henri is only just beginning to recover from a lack of easy access to groceries. "Since we set foot in the spot, it's crazy how it caught people's attention... and barely after two days of activity, we're both stunned by and so grateful for the response."
Marché La Pantry Par Dany Bolduc is serving bottles as well, as the restaurant's sommelier Jonathan Benchetrit is curating the fridge and shelves with organic wines from Quebec and elsewhere, in addition to beers and other products.
