Renowned chef Michelle Bernstein bridges the gap between old Miami glamour and present-day chic at her Floridian brasserie in The Thompson Miami Beach. Inspired by the coasts of Southern Florida and the Caribbean, the menu is brimming with fresh seafood, farm-fresh produce, natural reductions and sauces as well as high-end steaks. Worldly flavors make a cameo in most dishes, which is how Bernstein elevates what was once known as “Floribbean” cuisine to a more modern composition. The squash blossoms, for example, underscore her knack for turning a complex recipe into a harmonious dish. She starts with a base of corn grits with corn emulsion in a shrimp mousseline and seafood nage (similar to a fish soup), then she spikes the savory components with tart Turkish Aleppo chile pepper. Seagrape’s cocktail bar is gorgeous and a must-visit—with or without dinner. If you’re looking for the perfect aperitif, try the Pampelonne (Aylesbury Duck vodka, St. Germain, fresh lemon and grapefruit juice, basil and sparkling Vouvray).
