Former Nobu chef Daniel Bouza applies his training to traditional Hawaiian poke bowls here, doling out spicy tuna and sake-cured salmon varieties. On the bun front, he has braised short rib and crispy chicken vaca frita—a riff on the popular Latin beef dish. If that weren’t tempting enough, PokeBao’s menu also touts tempura fries.
