Mad Lab’s website lays it all out for you: soft-serve ice cream, Japanese cheesecake and chocolate created by chef Soraya Caraccioli-Kilgore. But there’s more to the kooky dessert shop with glitter floors, like its adorable unicorn cakes and its incredible matcha soft-serve—which beyond strikes the perfect balance between bitter green tea and sweet, refreshing ice cream. Each treat gets a generous spritz of edible sparkles but customers can upgrade to gold leaf, fancy sprinkles and other fun toppings. As for the cookies, brownies and that signature Japanese cheesecake (which is spongy and less sweet than the American kind), it’s all baked in house.
