Juan Chipoco expands his mini-empire of stellar Peruvian restaurants with Intimo (stylized as INTI.MO), a glitzy Nikkei spot in the South of Fifth neighborhood. The chef’s third endeavor follows the popular cevicheria Ceviche 105 and rotisserie chicken favorite Pollos y Jarras. At Intimo, Chipoco leans into the Japanese-Peruvian trend with a smattering of reimagined sushi dishes—like the poppable sushi bombs he tops with truffles and a tiny quail egg that bursts when you bite it—and Japanese staples, such as a glazed miso cod served alongside a zesty quinoa salad plus decadent duck-and-foie gyozas. Peruvian classics, including lomo saltado and chaufa rice, are also well represented on the exhaustive menu. For all its excess, the gilded spot (even the flatware is gold!) feels welcoming and, well, intimate.
