Chef Michael Schwartz’s third Design District restaurant, Cypress Room, is now Cypress Tavern. In operation as a fine-dining establishment since March 2013, newly minted Cypress Tavern takes a load off with pared-down dishes, like a half spit-fired chicken with crisp new potatoes and wood-grilled giant prawns, and a spirit-forward beverage program, featuring boozy classics like the French 75. Though the space is still undergoing some minor aesthetic changes, there are two staples executive chef Bradley Herron is making sure he keeps: a solid beer selection (three tap and nine bottles) and the popular Cypress Burger, served with thrice-fried potatoes.
