A Josper oven is a very expensive kitchen appliance powered by charcoal that essentially lets you grill indoors. And it’s the focal point at Arson, a Downtown restaurant dedicated to Spanish barbecue. Nearly all veggies, seafood and meats are scorched to perfection, save for the occasional carpaccio and seasonal salad. Typical of Spanish dining, the menu is made up of shareable dishes that free you up to order a bunch and try different things, such as duck cooked two ways (charbroiled and smoked), mussels with pork sausage and charbroiled mashed potatoes. High-powered oven aside, the airy space feels warm and inviting, namely the main bar area stocked with a curated assortment of Spanish wines.
