Not to brag or anything, but Time Out Market Miami has really outdone itself lately with its fresh line-up of big-name chefs. Last month, the South Beach food and culture destination welcomed James Beard Award winner Michelle Bernstein and her delightful burger and shakes concept, Little Liberty—among other notable additions. And there’s more to come.
This spring, Time Out Market welcomes back Top Chef-winning chef Jeremy Ford, who first joined the food hall in 2019 with his funky Korean street Krun-Chi. Now the Stubborn Seed toque returns with something decidedly fresher, a highly creative seafood bar he’s calling crew-do. From tuna to scallops to flounder, quality proteins will be served raw with dressings and seasonings to enhance their natural flavors.
Ford, who already keeps things interesting at his restaurants in South of Fifth (Stubborn Seed) and Palm Beach Gardens (The Butcher's Club), is committing to sourcing mostly local seafood and produce with special attention to seasonality and sustainability. Some of what diners will encounter include Florida founder with a spring pea emulsion, burnt onion yuzu purée and wasabi cracker; Panama City tuna with spicy mayo, shaved fennel and crispy nori; and red snapper with pineapple sweet plantain purée and escabeche.
