When the Midtown restaurant Proof closed in March 2018, Miami eaters mourned. There were a few reasons to feel sad. A lot of people really liked Proof’s pizza (there was an oxtail pizza that blew minds) and pasta. But a lot of people really, really like Proof’s burger: a juicy patty with white cheddar aioli and carmelized onions between homemade potato buns. Lord, it was good.
Or, should we say, is good. Because Proof ain’t dead yet. The restaurant just announced its pop-up inside Coconut Grove’s Taurus Beer & Whisk(e)y House is now a permanent residency. Proof will operate out of the restaurant Wednesday through Sunday from 6 to 11pm, serving appetizers, pizza, sandwiches and more. The Proof burger is back too but it’ll only be available on Wednesdays until they run out of beef. So you’ll want to get there nice and early for the best chance to tear into that fluffy little angel.
And after you’re done, the commute to the very fun Taurus Beer & Whisk(e)y House is approximately 0.0 seconds. This is the good news we needed on a Monday morning.
