For months we’ve watched Old Greg’s Pizza make the rounds on Instagram, gooey cheese from its square pieces dripping off the tiny digits of smiling food influencers. Them with a wide grin, just having had a bite of the impossible-to-get sourdough pizza. And us sullen, consumed with FOMO wondering when it would be our turn to try the elusive pie.
The wait is finally over this Friday. On July 3, Old Greg’s Pizza partners with chef Brad Kilgore and Kilgore Culinary Group for a pop-up at Kaido in the Design District. The takeout-only operation, led by namesake pizzaman Greg Tetzner, expands on the OG ‘roni pie made famous on Instagram with more topping options, new Italian starters, a couple of sweet-and-savory desserts and mezcal-soaked slushies.
Old Greg’s is made with a naturally leavened sourdough crust (Miami’s first) that’s light and crispy and features fresh, mostly local ingredients. For instance, the new Veg Supreme is topped with Florida mushrooms plus an assortment of peppers—long hots, shishito and pickled banana peppers. While more funghi goes atop the ‘Shroomz pie along with an irresistible wild ramps salsa verde for a zesty, onion-y kick. Polenta-crusted chicken wings, a kale caesar salad with everything croutons (a nod to Tetzner’s tenure as a baker at El Bagel) and garlic knots with garlic-butter hollandaise dipping sauce (inspired by the umami hollandaise Kilgore served at his restaurant, Alter) round out the list of new favorites.
James Beard-nominated Kilgore and Tetzner met on Twitter when the chef was trying to score a pie for his birthday. At the time, it was only available to friends and family while Tetzner perfected his recipe for the dough at home. Kilgore lucked out and was so enamored with Old Greg’s—which was scheduled to open in Wynwood before the county shut down—that he decided to shepherd Tetzner and his partner, Jackie Richie, on their pizza journey. “[Tetzner’s] dedication to the perfection of the dough paired with the sourcing of ingredients makes these pies one of a kind. It’s an incredible addition to our portfolio,” said Kilgore.
Old Greg’s opens to the public on Friday but pre-orders will start tomorrow at 1pm via the shop’s website, oldgregspizza.com, and will be available for pick-up at 151 NE 41st Street, #217, in the Design District, starting Friday. Get those digits ready to pounce on Thursday or risk another month of wallowing at your Instagram feed in pizza agony.
