Food Envy: Pho Mo’s pho chay

We’ve been eating a lot of food at Time Out Market Miami, and now we’re dishing on some of our favorite plates

My cravings for soup are few and far between. When they do occur, I find them prompted by bad weather (cue the summer rain) and feeling under it. Brothy things are not my favorite thing to eat, or rather sip, but that quickly changes the moment I feel sick. I haven’t suffered a cold since 2019 (thank you, lockdown) and I was fortunate enough to avoid contracting the C-word. But my streak of good health came to a screeching halt this spring when I got my first vaccine.

Yay, for shots! Boo for feeling like absolute crap after getting one. Reader, I won’t repulse you with the gory details of my physical state save to say that Pho Mo’s pho chay was the only thing that helped make me feel like myself again. One of three phos on the menu, chay is the vegan option, consisting of mushroom soup, assorted vegetables, noodles and a drizzle of lemongrass chili oil to finish it off. I love meat as much as the next person but would rather not have it swimming around in my soup, so I usually opt for something vegetarian. This one is now my go-to. Like the other phos, this one is also served with herbage, sprouts and jalapeño. It’s rich but also light and spicy without being offensive. I slurped every last bit up like my life depended on it, which seemed like it did at that particular moment.

Getting vaccinated is a personal decision (though the CDC does recommend it) but going for pho afterward should absolutely be mandatory.
