Time Out says

We have been reliably informed that passata is the lifeblood of Italians. The rich tomato puree is an essential ingredient in Italian cuisine, with many families setting aside days each year in which to create their own industrial quantities of the foodstuff.

Should you not be lucky enough to have a nonna of your own, you can still learn how to whip up a batch of passata. The team at Windsor’s well-loved Italian ristorante Tipico are hosting a free 30-minute long masterclass this February. Helmed by head chef Daniele Colombo and Luis Viota, the classes will teach you how to make passata using their own nonna’s recipes as inspiration.

During the demonstrations, there will be bowls of freshly made pasta available to purchase and eat on the spot and bottles of freshly made Italian passata to take home for $10 each.

Be warned: passata making is messy business so wear white at your own peril. Book in your masterclass for either Saturday, February 27.
