Opened in late 2017, Ratio Cocoa Roasters is a bean-to-bar chocolate store that uses single origin cacao beans to create handcrafted chocolate bars.
Ratio’s tart – but delicious – dark chocolate is made up of only two ingredients: cocoa nibs and organic raw cane sugar that’s sourced from Brazil. For their milk chocolate, they add in Australian whole milk powder and organic Peruvian cacao butter for that softer, creamier taste. There’s no hidden nasties in these bars, so there’s nothing’s masking the flavour of the cacao beans.
Owner and operator Debbie Makin learnt traditional chocolate making techniques during her time in Africa, Peru and the Soloman Islands where she saw first hand how the cocoa trade is conducted. Makin and her team use traditional chocolate making techniques to create their bars, which are turned from cacao beans to chocolate bars in-house.
