In 2023, Tristan Jallais and his wife Joyce Chua opened Natural Science Wine and Liquor with a mission to bring good booze to the leafy east. It's an area that's long been dominated by big box retail and strip mall bottle shops, and so this new family-owned store brings a point of difference: every bottle on the shelves is from an independent Aussie producer. 

In fact, Natural Science Wine and Liquor is Melbourne's very first Australian-only liquor boutique. You won't find any imports or corporates on the shelves here – just independent, Aussie-made wine, beer, spirits and non-alcoholic beverages. If you make a purchase here, you can rest assured you're supporting local industry and business owners.

Tristan and Joyce have curated a selection that hones in on both emerging and established makers they love, and they each bring a wealth of hospo experience to the table. Prior to Natural Science, Tristan managed the Post Office Hotel in Coburg and worked at (now closed) fine diner Momo, while Joyce earned her sripes at Market Lane Coffee.

Their shop poses the question: Australia's producing a higher volume of exceptional quality drinks than ever before, so why not celebrate that? The staff are always happy to chat and tailor products to your preferences, so you can take home a drop that hits the spot.
