Poached Chicken Breast Salad

Serves: 2
Cooking time: 30 mins
 

Ingredients

150g chicken breast, poached and cooled in the fridge
20g cucumber, sliced
20g carrot, sliced
10g radish, sliced
20g red onion, sliced
5 pieces sugar snaps, blanched
2 pieces baby corn, blanched
2 stalks broccolini, chopped and blanched
Kewpie Japanese Dressing Roasted Sesame 

Method

1. Slice chicken into thin strips.
2. Arrange chicken and all vegetables on a serving plate and drizzle desired amount of Kewpie Japanese Dressing Roasted Sesame over. 

Shrimp Tempura Soba Salad

Serves 2
Cooking time: 40 mins

Ingredients

180g (2 bundles) soba noodles, cooked according to packet instructions
10 prawns, peeled, tails left intact and deveined
1 cup tempura batter mix
¾ cup cold water
vegetable oil, for deep frying
50g pea sprouts, for garnish
¼ cup Kewpie Japanese Dressing Sesame Soy
¼ cup Kewpie Mayonnaise Wasabi Flavour

Method

1. To keep prawns long and straight, make 3 to 4 horizontal shallow slits along the underside of each one. Turn them over and press down firmly, moving from one end to the other, until the shrimp is completely straight.
2. In a bowl, add ½ cup tempura batter mix with prawn and mix thoroughly.
3. In a separate bowl, mix remaining tempura batter mix with water to make dipping batter.
4. In a medium pot, heat 3cm of oil to 180°C and maintain oil temperature at all times.
5. Add shrimp into dipping batter. Pick up shrimp by the tail and let excess drop off for 1-2 seconds and gently place into hot oil for 2 mins or until golden brown and cooked. Continue battering and adding one piece at a time.
6. To make dressing, mix Kewpie Japanese Dressing Sesame Soy and Kewpie Mayonnaise Wasabi flavour.
7. Plate soba noodles on serving dish, garnish with pea sprouts and serve with shrimp tempura and dressing alongside. 

Beef Tataki with Kewpie Dressing

Serves: 4
Cooking time: 20 mins

Ingredients

500g porterhouse steak
½ cucumber, julienned
1 carrot, julienned
½ red onion, thinly sliced
2 radishes, thinly sliced
1 tsp white sesame seeds 
1 tsp black sesame seeds 
½ cup Kewpie Japanese Dressing Roasted Sesame
2 tbsp Kewpie Japanese Dressing Sesame Soy   

Method

1. Heat oil over high heat in pan until almost smoking.
2. Place steak into pan and sear on all sides until nicely browned on the outside. Remove from pan and plunge into an ice bath to halt cooking process.
3. Leave to chill for 1 min, then remove and dry with kitchen paper. Thinly slice into even pieces and let cool in fridge.
4. In a large bowl, add cucumber, carrot, onion, radish and sesame seeds, and mix well.
5. In a separate bowl, mix Kewpie Japanese Dressing Roasted Sesame and Kewpie Japanese Dressing Sesame Soy to make dressing.
6. Arrange beef on a serving plate and drizzle with desired amount of dressing. Serve with salad alongside.
