Local brothers James Pearce and Nathan Salvalaggio wanted to bring a premium all-day dining and wine bar with a lounge atmosphere to the bustling café, bar and restaurant culture of the Werribee city centre.
The café is a beloved site for the Salvalaggio family. Before the brothers opened it as the Wolf on Watton in late 2019, the space had been in the family for four generations, first built as a fruit and vegetable shop with a gelati bar by their great-grandfather in the 1940s.
Here you can start your day with house-brewed Five Senses coffee and refined breakfast options like a bagel with citrus-cured salmon, or sriracha chilli scrambled eggs with bacon and roasted peanuts.
For lunch and dinner there’s juicy burgers to choose from, like the WFC “Watton Fried Chicken” burger with the chef’s special herb and spice mix, and the slow-cooked 48-hour Korean beef rib burger. Or, the ‘something bigger’ menu draws on the brothers’ Italian heritage, with truffled mushroom risotto, linguine carbonara with pancetta and egg yolk, and traditional homemade lasagne with beef ragù. Nibbles wise, the grazing box packs all the goods with artisan cured meats and cheeses.
When it comes to tipples, they’ll have you taken care of with well-rounded drinks lists covering local and international wine, craft beers, and expertly mixed cocktails. On one end of the curated beverage spectrum, the Love Potion combines “everything sweet” with white rum, strawberry, lime juice and vanilla; and on the other hand the warm and slightly spicy Agave-Tini combines tequila, espresso tequila, espresso and brown sugar.
The weekend starts early at the Wolf, with live acoustic musicians setting a chilled atmosphere from Thursday evenings through to Sunday. If you’re looking to kick back in a stylish yet relaxed place in Werribee, this is the place to be.
