This family-run Collingwood bakery has developed a bit of a cult reputation for their bánh mì.
Vegans flock here for the impressive range of plant-based options, from vegan roast duck and vegan chicken to eggplant tempura and lemongrass tofu. Meanwhile the roast pork roll contains roasted pork cubes with a balanced blend of fat and crackling.
Purists may not be so hot on the texture of the bread rolls – which is overly dense rather than light and crispy – or the less-than-traditional fillings including purple cabbage, capsicum, fried shallots and roasted peanuts that do little to cut through the richness of the pork and pâté. A better order is the soy-soaked vegan duck, meat-like in texture, drizzled with an unconventional peanut sauce.
Trang Bakery also offers noodle salads, rice paper rolls and sweets, but it's the bánh mì that draws people here.
