Kevin Bludso hails from Texas, and has brought three generations of expertise to his barbecue restaurants in Compton and West Hollywood in LA. Bludso’s BBQ has become one of the most popular smokehouses in the city, known above all for its brisket, cooked ‘slow and low’ in smokers for up to 14 hours. In his Melbourne restaurant, San Antone by Bludso's BBQ at Crown Melbourne, to ensure you’re tasting the same authentic Texan flavours, Bludso has sourced his own wood for the smoker, as well as natural charcoal.
On the menu, choose between sticky pork spare ribs, fall-apart pulled pork and of course, the smokey beef brisket. Make sure you get plenty of sides: house seasoned fries, potato salad and mac and cheese, for a start.
