Time Out says

The Langham's Melba Restaurant is not your regular hotel restaurant. The restaurant's range of seasonal fresh and cooked-to-order dishes are a dream for the indecisive diner, who can start at the fresh seafood and sushi section for super fresh oysters to tuna sashimi.

For the main event, you can choose from a variety of stations including a South East Asian wok section, a traditional roast carvery, Indian curry and tandoori stall and fresh Italian pasta corner with a chef that will cook the day's specials to order. Leave room for the dessert options, which features an eye-popping range of fancy petit fours, ice creams, and a chocolate fountain to make any sweet tooth satisfied. Seconds are definitely allowed, because you can't miss our on the heaving cheese spread.

It would be wise to make a booking before you go to the Melba Restaurant, and do ask for the window-facing seats. The restaurant is open daily from 6.30am to 11pm, serving a full buffet and a la carte selection for breakfast, lunch and dinner. It's a classy affair, so wear your finest (albeit giving) attire for your buffet feasting.
