Mantou is a market exclusive concept by Chamil Kelly, former head chef and manager of Chinese street food eatery Wonderbao. Taking on the mantou, Kelly is combining Japanese, Korean and traditional Chinese flavours to the Taiwanese bun snack.
Kelly will be collaborating with chef Matti Fallon, fomerly of DuNord and Huxtable, and together they've come up with a street offering where you're supposed to get your fingers dirty. Diners are meant to tear apart the freshly fried or steamed buns and pile on sides you've ordered, like the school prawns with curry leaf and gochujang mayo, or braised pork with cumin, coriander and orange.
