Ross Magnaye (Rice Paper Scissors) and John Rivera (Lûmé, Kariton Sorbetes) are taking over Janine Barican's Filipino eatery Chibog’s kitchen in West Footscray to put on a playful, nostalgic dinner for one night only.
The duo were inspired by Filipino fast-food chain Jollibee, famed for its Chickenjoy – juicy fried chicken, and Jolly Spaghetti – pasta topped with sweet tomato sauce, hot dog slices, chunks of ham and minced meat.
Priced at $95 per person, the shared banquet will draw upon the flavours of the Filipino chefs childhoods and showcase dishes like fried chicken wings with Ate Joyce’s spaghetti sauce, and pancit palabok, a noodle dish that’s typically packed with a shrimpy punch, but is instead spiked with smoked sea urchin butter and chicharon (fried pork rinds).
Wash it all down with ice-cold Filipino lagers like Red Horse and San Miguel that will be available all night.
