Whether you are lining up for a toasted sesame loaf, a cardamon bun or the inimitable egg salad sandwich, those in the line snaking down Smith Street share a collective understanding that the wait, no matter how long, really is worth it at Falco Bakery. And now, Langridge Street locals are set to join the queues, with Falco slated to open a second store in Collingwood in February, 2023. 

Owners Christine Tran, Michael Bascetta, Manu Potoi and Casey Wall opened the OG Falco back in 2019, and it quickly became a local favourite. As a small-batch bakery, baker Christine uses traditional techniques and champions local, high-quality ingredients. 

Falco is a tranquil and comfortable space to read the paper on a Saturday morning or the perfect pitstop for a takeaway sandwich. The signature crusty loaves are the secret to the always-popular sandwiches, and the flaky pies, with rotating specials, keep people coming back for more. Collingwood locals should count themselves lucky, with menu favourites such as the peanut butter and miso cookie expected to make an appearance at the new store, as well as more expansive savoury options such as the filled bagels.
