The restaurant that has been claiming to make pizza sexy down in South Yarra has made the shift north of the river to the CBD. Owner Remo Nicolini, who first opened as Non Solo Pasta (NSP) in Docklands before setting up the first A25 in South Yarra in 2015, offers a similar cafe-restaurant hybrid experience to the CBD location. City workers can pop in for on-the-go breakfast options and coffee in the morning, but service truly takes off later on for lunch and dinner.
Nicolini has a formidable pizza pedigree, having previously owned +39 on Little Bourke. Moreover, his brother Tony Nicolini owns the legendary D.O.C. pizza restaurants. His pizzas put a spin on the traditional offering, experimenting with alternative flours like kamut and spelt for his base, that he claims are "easy-to-digest". The toppings are likewise unorthodox, bringing along A25 favourites like the Bunga Bunga with porcini mushroom and parsley. For dessert, traditional Italian reigns supreme with three options straight from the Boot: tiramisu, cannoli and affogato. Alternatively, pick up a more modern creation like a dessert pizza.
