Sandwiches might be one of the greatest foods in the world, and Maker and Monger in Prahran Market is known to take the humble grilled cheese sandwich and zhuzh it up beyond belief with premium ingredients. Now cheesemonger Anthony Femia is back at it again, but this time with MasterChef winner Diana Chan and together they’ve coined a toasted sandwich you won’t soon forget.

The Sambal Hae Bee toastie is inspired by Malaysian dried shrimp sambal and comes with ground shrimp, shallots, lemongrass, garlic, galangal, chillies and melted provolone in a fluffy brioche bun that’s toasted in the oven. Cucumber slices are then added to the sandwich as a refreshing end note and it’s served with a pickle on the side to add some tangy pizzazz.

The limited-edition snack is priced at $11 and will be available from Saturday, January 30 until the end of April at Maker and Monger, Prahran Market.

Follow it up with a drink at these 30 Melbourne bars that are doing half-priced food and drinks all January.
