City slickers, there's a new bar coming to you from the team behind Welcome to Thornbury, Mr Burger and Belle's Hot Chicken. Their latest opening is Hightail, a sprawling bar and eatery on Collins Street. Located on the ground floor of Docklands' Collins Square, the venue is designed a fit a whopping 950 people (and counting).
"We based the design of the venue around this one idea – of Hightail being a literal watering hole, an oasis," says co-founder Daragh Kan. Queue the Lion King soundtrack, please.
Those familiar with the Welcome to Thornbury food truck muster can expect a permanent version of the multi-option dining and bar model. There's a sweeping bar in the centre of the venue and punters can choose between Mr Burger, Belle's Hot Chicken and Super Taco for their food.
You don't even have to go to the counters to get your meals – the venue developed a food delivery app which allows you to order some fried chicken, a burger or even a beer and get it delivered straight to your table.
There are thousands of office workers above Hightail and nearby in Docklands, and being a stone's throw from Southern Cross Station, we're guessing this new Docklands local will give its Thornbury brother a run for the "most popular" crown.
