The pitmasters behind Burn City Smokers have made a name for themselves as makers of primo barbecue, and it's a shame they don't have a restaurant yet (apart from a test kitchen in South Kingsville) but maybe they do it to keep things interesting for the fans who hunt down their famous brisket and short ribs.
Good news barbecue hunters, because Burn City Smokers' Steve Kimonides and Raphael Guthrie has set up shop at Grand Hyatt Melbourne on Collins Street for winter. The pop-up will see the Burn City smoker trailer park up at the laneway by the hotel until August 31.

The Burn City pop-up crew collaborated with the Grand Hyatt Melbourne executive chef Jason Camillo on the project, taking over the hotel's Collins Kitchen bistro. Expect a new winter menu featuring beef, chicken and pork that has been cooked low and slow over a wood fire. Think short ribs, hanger steak, and smoky roast chicken. Punters and guests of the Grand Hyatt will also be able to taste test the signature brisket burger (a festival classic), with classic barbecue side dishes, and lush winter desserts.
Burn City pop-up will be open for lunch Monday through Friday from noon to 2.30pm and for dinner Monday to Sunday from 6pm to 10.30pm. Bookings available.
