Spitfire is Stay Gold's new front bar to the late-night rock 'n' roll venue. It's not any old front bar, the Stay Gold team have partnered with chef Blair Williams (Longhorn Saloon, Piqueos) to construct a menu that centres around a massive wood fire oven. What's different about Spitfire's menu is that it will mostly be centred around vegetables to cater for vegetarians and vegans, with only two meat-based dishes on the carte, taking influence from Williams' cooking past using European, Southern and South American styles and techniques.
