This restaurant that specialises in paellas and rice dishes is one of the oldest of its kind in Madrid. Vicente and Carmen opened it up more than 40 years ago, and now their children carry on the family tradition. There's also a lovely terrace where you can eat outside on summer afternoons. The star restaurants at Samm are the Valencian paella, a 'senyoret' paella (all the shells and fuss removed for you) cooked to perfection, and the baked rice dish. Some of the more popular dishes you have to order in advance, so be sure to ask when you book. The paellas get to your table hot with a fine layer of rice always cooked just right and never sticky. Definitely a top option for fans of a good paella or anyone who wants to try the real thing done as it should be, without taking a trip to Valencia.
