'We had a bit of security and a lot of experience but also some doubts. The menu requires enormous work, we do everything ourselves, and this is not a small or informal version of Desencaja. It's a complementary but radically different proposal,' explains Jesús, who's at the helm of this space opened in the last half of 2019 that he co-manages with his brother, Chef Iván Sáez. Of course, both restaurants share a pantry, which affords them access to a range of first-rate products. 'A lot of people from the industry have already come on their own and then returned with their family. That makes us proud.' The set lunch menu is great value for money, and your meal comes with a drink (not a mere glass of wine, but a bottle of a Rioja Crianza), and both dessert and coffee. Get there early enough, though, because they don't take reservations (saying it wouldn't be fair to regulars), and it's a place that's sure to fill up.
