Chef Diego Guerrero was at the helm of El Club Allard, earning its two Michelin stars, until 2013, when the reins of this stately space were taken over by self-taught María Marte del Rosario, who did her part in keeping the two stars firmly in place. She moved on in early 2018, and chef José Carlos Fuentes took over, bringing in a cuisine that stands out for its delicacy and innovation, as well as for the chef's knowledge and command of traditional national and international cuisine, especially Japanese once it passes through Tokyo, which is an interesting addition to the menu.
