“Stop for a little while. Take off your shoes. Let the others be the ones to hurry. Touch the floor with the soles of your feet, bare matter, earth, water”. The slow food experience that has recently opened in the neighbourhood of Salamanca is based on this philosophy. Healthy cooking and eco-friendly, this new place intends for customers to lower their heart rate and get back the real flavour of things. Homemade jams go with toast made of milled flour, whole wheat and mother mass. Even the croissant is eco-friendly at this green corner, located in the city’s golden mile. Bumpgreen is lead by chefs David Ariza (savoury dishes) and Jordi Bresó (a Valencian pastry chef that shows his ability with desserts). You can imagine the rest: detox juice, fresh salads, seasonal hummus, vegetable pasta, cream… The meat is beef from Galicia (cachena, an endangered species) and it’s served even as fish sometimes, as part of their support to sustainable fisheries. You can take almost everything home (furniture included).
