Time Out says

We don’t know if Cristina and Yajaira are bigger fans of vinegar or vermouth, but using these two loves as a starting point, they’ve created one of the best places in Madrid to enjoy an aperitif: La Gildería. If it’s not already one of your favourite bars, it soon will be.

The high bar, tables and many stools were all designed by Codoo Studio. As the name suggests, the legendary gilda (a marvellous invention from the Basque Country, which sees a guindilla pepper, a Cantabrian anchovy fillet, and a pitted manzanilla olive served together on a small skewer) takes centre stage, complemented by a good selection of vermouths and a special, secret house creation. Oh, and they’re pet-friendly too.

However, La Gildería is much more than that. While its prime time is every Saturday and Sunday at midday, its opening hours are more extensive – though it only opens from 7pm on Wednesdays and Thursdays.

Expect tinned delicacies and cold snacks (except for a superb, scene-stealing octopus sandwich). The bestsellers include smoked sardine on toasted bread and smoked cod with piparra and ito togarashi mayonnaise, as well as all their variations of gildas (octopus, smoked salmon, prawn, smoked tuna and more), all served in a tavern that retains a somewhat retro charm while embracing the vibrant personality of its current owners and new clientele.

Can you book?

No, La Gilderia doesn’t take bookings. We’d recommend heading down early; La Gilderia is gaining more and more fans and it gets pretty busy, especially around midday on Saturdays and Sundays, the traditional time for a Spanish aperitif.

Where is it?

La Gildería is located at number 17, Calle Calatrava, in the La Latina neighbourhood, very close to the Rastro market and halfway between the Puerta de Toledo and the Mercado de la Cebada.

How to get there

If you are driving, you can park in one of the area’s car parks. If you’re taking public transport, you can take the metro Line 5 to La Latina or Puerta de Toledo, or you can take the 002,17, 18, 23, 35, 60 and N26 buses, which all stop nearby.

Opening hours

La Gildería is open on Tuesdays from 7pm-midnight; Wednesday–Saturday from 1pm-midnight; and Sundays from midday-10pm.
