Susuru also serves a lighter chicken-based shoyu, a killer vegan ramen broth that integrates two different kinds of miso and a khao soi ramen that reimagines the traditional Thai curry dish into a luxurious coconut milk broth topped with chicken, soft-boiled egg, pickled mustard greens, red onions, chili oil and a nest of crispy fried noodles.
