Currently operating out of sister restaurant Inaba in Torrance, Yasuhiro Hirano’s intimate sushi counter offers an ultra-premium omakase ($280) that deftly incorporates dry-aged fish and exotic ingredients like mantis shrimp and plump Japanese oysters. Granted a Michelin star in 2021, Sushi Inaba is a place where diners can expect a crash course in the art of sushi from the chef himself, plus tuition and fees to match. The shari (sushi rice) here is some of the best in the city, and the restaurant lacks the usual pretension found at high-end omakase spots closer to L.A. proper; it’s no surprise that Sushi Inaba’s reservations, which drop on Tock at noon on the first of every month, sell out almost instantly. Most nights, you’ll find a clientele of repeat customers and sushi-loving locals. Those with deep pockets will also appreciate Inaba’s collab dinners at Sushi Kaneyoshi on Tuesday nights, when you can snag a taste of Hirano in Little Tokyo for a cool $400 per head.
