A new, indefinite pizza pop-up is headed to Glendale’s Americana at Brand, and it wants to be a cut above. Inspired by Rome’s al taglio-style pizzas—which are cut with scissors—ROCA is a new concept from California Pizza Kitchen cofounder Rick Rosenfield, along with his wife, and features pizzas cut to order.
The pizza dough gets fermented for 72 hours and rolls out thin for an airy crust meant to crisp on the bottom. Toppings include specialty cheeses, plus produce sourced from local farmers markets, for options such as the squash blossom pizza with zucchini, mozzarella and di Stefano ricotta; the house-made Italian sausage with potato and fried rosemary; and, of course, a nod or two to Rosenfield's CPK roots, such as a BBQ chicken pizza and a Thai chicken pizza—both made with Mary's organic chicken.
Pizzas will be available by the cut and by the half or whole tray, with salads, drinks and sandwiches, to boot. It’s all available to-go or with patio seating, and eventually, you’ll also be able to find ROCA on delivery platforms Caviar and DoorDash.
