A delicious mushroom-based riff on buttery, garlicky French escargots; deep-fried quail with Sichuan peppercorns and Peruvian aji verde; a warm Napa cabbage salad topped with crispy bits of anchovy unfurled at the table—while head chef Brandon Kida (of Go Go Bird and Century City’s Hinoki and the Bird) is reluctant to apply a single label, the small plates at this sleek new eatery on the former CBS Studios campus could best be described as intergenerational American cuisine. Gunsmoke's tightly curated menu integrates ingredients that reflect the kitchen team’s collective experiences as children of immigrants—and features creative dishes that might not appeal to their parents, but would most definitely please most Angelenos. A spirit-forward cocktail list from Lost Property's Rhino Williams rounds out the offerings at Gunsmoke, which takes its name from the mid-century Western radio show once recorded in the very same space.
