Canadian founders Tum Cohl and Evan Goldberg (from Toronto and Vancouver, respectively) have filled a specific but important niche in the food truck world: poutine. Fortunately, hand-sliced French fries, cheese curds and sweet gravy are just the beginning: the truck offers wildly creative variations on the Canadian delicacy, like poutine sliders, the pork-topped Big Joe, and the Big Country, which includes a panko-breaded chicken breast and an over easy egg.
