Chez Melange may be stuck with a nondescript location tucked away inside a hotel, but it is one of the best kitchens in a wide radius. It's the restaurant that brought California cuisine to the area as long ago as 1982 - almost prehistoric times for LA. More than 25 years later, it retains relationships with suppliers that ensure that they get the best of everything. Come for adventurous food: house-cured and smoked meats, buttermilk fried chicken salad.
