Say what?
You heard us. Eight courses. All ice cream. Well, with a slab of pork belly and a charred onion with vinegar thrown in there. Chef Kyle Schutte, who has worked at restaurants across LA and is now gearing up to open his own project called the Flats, is known for testing the limits with his innovative cuisine. That's why this dinner isn't your average fine dining affair. Each course is named after the scoop of a wildly unique ice cream flavor that accompanies it, starting with Sushi Rice—a small plate featuring uni, nori ganache, peanuts and whatever the hell sushi rice ice cream is. Subsequent courses range from charred onion, tallow, peach vinegar and mustard greens supplemented with roasted peach ice cream to a piece of pork belly atop a bed of roasted papaya emulsion flanked with lemongrass ice cream.
The dishes aren't all savory. The last two courses aim to please the more sweet-leaning diners among us, with espresso ice cream accompanied by vanilla foamed milk and sweet thyme biscotti, along with a final mint ice cream course. The meal is BYOW (Bring Your Own Wine); with 15-20 people per serving, sharing wine is encouraged.
