Celebrated San Francisco pastry chef Bill Corbett left the Absinthe Group (Absinthe, Boxing Room, Comstock Saloon and Bellota) last September with vague explanations of eventually opening his own project in LA. Corbett had made a serious name for himself in the Bay Area, winning the title of Best Pastry Chef from San Francisco Magazine in 2011 and named one of the top 10 pastry chefs in American by Dessert Professional Magazine. When he left Absinthe, San Franciscans were bummed, to say the least.
Luckily for us, Corbett is making a resurgence in LA—and it's not just about pastries. Starting on June 30, the chef will host a vegetarian dinner series at LAMILL Coffee Boutique every Thursday and Friday, with a menu that changes weekly. The initial four-course dinner sounds like a delight: vadouvan French onion dip with fingerling potato chips; smoked corn soup; a falafel plate with English pea falafel, carrots in sumac and scallion tzatziki; and roasted strawberries with ricotta mousse, lemon yogurt cake and candied celery. Swoon.
Diners can enjoy the tasting menu for $40, as well as an optional beverage pairing with each course for an additional $20 (reservations aren't necessary). The menu is offered between 6:30pm and 8:30pm, but the fate of Corbett's project remains up in the air after summer. Will he open a brick and mortar elsewhere? Will LAMILL allow the pop-up to stay longer? One thing we can say with relative certainty: he probably won't be heading back to SF. Do you see this sunshine??
