Potlatch: it can either be defined as a Native American ceremonial feast or a wild party. We're guessing that Jonathan Williams and Nick Gilkinson – the duo behind this Poplatch pop-up – are intending to present a bit of both at what promises to be an extravagant and full-flavoured feast. After all, Williams was formerly the chef at the cutting-edge Shoreditch joint Clove Club and Gilkinson is part of the management team at the swanky German Gymnasium.
Kicking off this one-night-only dining experience, are a series of delectable sounding dishes involving salt-baked celeriac, roasted Cornish monkfish and smoked wood pigeon. Plenty of wine will be on-hand too, selected by Gilkinson from small vineyards in various regions. Then to satisfy any sweet teeth before the night's out, quince and shortbread will be served up with a salted caramel custard.
