If you're looking to rustle up something a little different for Easter lunch this year, why not try your hand at a fish dish and learn from the experts at Billingsgate Seafood School. An evening class on Maundy Thursday will teach participants how to make tuna and chilli burgers, seafood sausages and tandoori prawns, while a seafood lasagne will be on the agenda for Good Friday's class. Attendees will learn how to make pasta from scratch, perfect a classic roux and prepare various fish and shellfish for the dish. On Easter Saturday, the class will focus on a selection of delicious mezze and demonstrate how to make Italian style olive oil bread. The Seafood School team will create a tasty seafood chowder for participants to enjoy with a glass of wine at lunch before continuing with a the practical cooking class. Recipes include: smoked chilli prawns, chunky avocado and tuna tataki and hot roast salmon rillette. All courses should be booked in advance.
