Silk restaurant at Courthouse Doubletree by Hilton is located in an oak-panelled room – formerly the infamous Number One Courtroom where Oscar Wilde, Mick Jagger and John Lennon stood trial – and where today head chef Rajesh Parmar has created a menu inspired by spices found along the silk route, blending Chinese, Indian and Middle Eastern influences. Signatures dishes include scallops with kaffir lime leaf and chilli froth, and an interpretation of Jungli Maas, with tender Kentish roe deer flavoured with chillli paste and coriander seeds and served with smoked vegetable salad.
