Carousel is hard to pin down as a restaurant experience. It’s not a pop-up and it’s not a supper club; instead, it hosts short-term residencies from some of the world’s top gastronomic players. Recent visitors include Edinburgh-based chef Tómas Gormley, Julie Lin and BBQ chef Ana Ortiz. There’s also a mezcal bar, No. 23 as part of the package.
