Journalist Luciana Bianchi has been working with The House of Peroni on a granita recipe feature. Recipes for this semi-frozen dessert – like a granular sorbet, made with water, sugar and natural flavourings – vary from region to region across Italy, according to local ingredients. The classic flavours are almond, pistachio, coffee, lemon and chocolate, and it’s often served with a sweet brioche.

In London, granita is growing in popularity. Especially in summer, as it’s the ultimate treat in hot weather.’ See Luciana’s savoury granita recipe at thehouseofperoni.com.

Zazà Gelato
Zazà Gelato
Zazà works with classic flavours including almond and mint in their regularly changing granitas throughout the summer season. Ask for a dash of whipped cream on top for an extra touch of luxury. They currently have three stores around London, and they’re opening at Bluewater soon, too, as their granita empire continues to grow.

Sorbitium Ices

This creative ice cream-making outfit offers unusual varieties of granita, changing seasonally. The intense, fragrant flavours include lychee granita with liquorice ice cream, plus tamarind and tequila, watermelon and rose, cherry negroni, blackberry and rose geranium, espresso, elderflower, mint and lemon, bergamot lemon tea, and almond milk. At the moment, you can only find them at markets like Street Feast in Dalston and London Farmers’ Market in Marylebone or by booking them for events, but they’re opening their first shop in the near future.
