We like Barrafina. We like it a lot. In fact, we’d go so far as to say it’s our number one restaurant in London, which is pretty much the loftiest accolade going. So yes, Barrafina = really bloody marvellous.
So the news that Nieves Barragán – the big B’s executive chef for nine years and the woman who basically made it what it is today – is opening a new Spanish joint with José Etura, an ex-Barrafina general manager, is BIG.
Opening this autumn on Mayfair’s Heddon Street, Sabor will be dishing up regional food from across Spain, made using trad ingredients and cooking methods – Galician octopus and asador-cooked (aka wood-fired) Castilian suckling pig are already being mooted as specialities, to be served on large tables overlooking an open kitchen. Downstairs there’ll be a bar sloshing up sherries and effervescent Basque txakoli among the other wines and beers.
If that wasn’t promising enough, Sabor’s being backed by the JKS Restaurants group – aka, the canny players behind Bao, Trishna, Gymkhana, Xu, Lyle’s, Kitchen Table and Hoppers. A match made in heaven? Sounds like it. Watch this space.
